According to the Purity Law of 1516, only the following ingredients may be used to brew beer: Malt, hops, yeast and water.
Malt is pre-treated barley that is made to germinate by steeping, enzymes specific to the grain are formed. When these enzymes are activated, the water is removed from the grain again, i.e. dried. The drying temperature and the duration of the drying process determine the colour of the malt and, accordingly, the colour of the beer later on: Helles, Weizen, Maibock and "Rampendahl Spezial" - this has a root spice content of 12.5% and therefore about 5.2% alcohol by volume after fermentation.
